Instant Pot Taco Soup - Spicy Southern Kitchen
This Instant Pot Taco Soup from Spicy Southern Kitchen is a quick and tasty meal that tastes like comfort food from the South. It's great for a cozy dinner or a get-together with friends because it's full of hearty foods and strong spices.
Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz corn, drained
- 1 can 15 oz diced tomatoes
- 1 can 4 oz diced green chilies
- 1 packet taco seasoning
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 4 cups beef broth
- 1 cup water
- Salt and pepper to taste
- Toppings: shredded cheese, sour cream, chopped green onions, cilantro
Instructions:
Put the Instant Pot on "Saute" and brown the ground beef
Slice the onion, bell pepper, and garlic and add them
Cook the vegetables until they get soft
To make the chili, add diced tomatoes, green chilies, taco seasoning, cumin, chili powder, smoked paprika, water, salt, and pepper
Then turn off the "saute" mode
Mix well
Make sure the steam release valve is set to "Sealing" and then close and lock the lid
For 10 minutes, set the Instant Pot to "Pressure Cook" mode and high pressure
After the cooking cycle is over, let the pressure drop naturally for 5 minutes and then do a quick pressure release
Take off the lid and stir the soup
If you need to, change the seasoning
Grate cheese, sour cream, chopped green onions, and cilantro on top and serve hot
