Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup bourbon
  • 1/2 tsp mint extract
  • Green food coloring optional
  • For the Buttercream Roses:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup bourbon
  • 1/2 tsp mint extract
  • Green food coloring optional

Instructions:

Preheat your oven to 350F 175C and line a cupcake pan with paper liners

In a mixing bowl, whisk together the flour, baking powder, and salt

In another bowl, cream together the softened butter and granulated sugar until light and fluffy

Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next

Mix in the milk, bourbon, mint extract, and green food coloring if using

Gradually add the dry ingredients to the wet ingredients, mixing until just combined

Divide the batter evenly among the cupcake liners, filling each about 2/3 full

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean

While the cupcakes cool, prepare the buttercream: In a large mixing bowl, beat together the softened butter, powdered sugar, bourbon, mint extract, and green food coloring if using until smooth and fluffy

Once the cupcakes have cooled completely, pipe the buttercream onto each cupcake to create beautiful rose designs

Enjoy your Mint Julep Cupcakes with Buttercream Roses!
