Ultimate Vegan Buddha Bowl



This Ultimate Vegan Buddha Bowl combines a variety of nutritious ingredients into one satisfying meal. Packed with protein, fiber, and healthy fats, it's a perfect balance of flavors and textures. The tahini dressing adds a creamy and tangy finish to tie everything together.

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup cooked chickpeas
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup tahini
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions:

In a medium saucepan, combine quinoa and water

Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until quinoa is cooked and water is absorbed

In a large skillet, heat olive oil over medium heat

Add diced onion and minced garlic, saut until translucent

Add sliced bell pepper, broccoli florets, and sliced carrots to the skillet

Cook for 5-7 minutes or until vegetables are tender

In a small bowl, whisk together tahini, soy sauce, maple syrup, lemon juice, salt, and pepper to make the dressing

To assemble the bowls, divide cooked quinoa among serving bowls

Top with sauted vegetables, cooked chickpeas, sliced avocado, and cherry tomatoes

Drizzle tahini dressing over the bowls and serve immediately
