Vegan Banana Cinnamon Muffins
Delicious and moist vegan banana muffins with a hint of cinnamon, perfect for breakfast or as a snack.
Ingredients:
- 2 ripe bananas, mashed
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1/2 cup almond milk
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
Instructions:
Preheat oven to 350F 175C
In a large bowl, mix mashed bananas, maple syrup, melted coconut oil, almond milk, and vanilla extract
In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon
Combine wet and dry ingredients until just combined
Do not overmix
Divide batter evenly into a muffin tin lined with paper liners
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean
Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely
