Cajun Pumpkin Pasta



There is something comforting and tasty about this Cajun spiced pumpkin pasta with creamy tomato sauce. The warm Cajun spices go well with the sweet roasted pumpkin. The dish tastes rich and full because of the creamy tomato sauce. It's a great meal for any occasion.

Ingredients:

  • 1 small pumpkin, diced
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can 14 oz diced tomatoes
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 12 oz pasta of choice
  • Fresh parsley for garnish

Instructions:

Preheat oven to 400F 200C

In a bowl, toss diced pumpkin with Cajun seasoning and olive oil

Spread onto a baking sheet and roast for 25-30 minutes or until tender

In a large skillet, heat olive oil over medium heat

Add onion and garlic, saut until translucent

Add diced tomatoes and cook for 5 minutes

Stir in heavy cream and roasted pumpkin

Simmer for 5-7 minutes until sauce thickens

Meanwhile, cook pasta according to package instructions until al dente

Drain and set aside

Toss cooked pasta with the creamy pumpkin sauce

Season with salt and pepper to taste

Garnish with fresh parsley before serving
