Keto Gouda Grits with Shrimp and Crispy Sprouts - Maebells
Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 cups Brussels sprouts, halved
- 1 cup cauliflower florets
- 1 cup chicken broth
- 1 cup shredded Gouda cheese
- 1/4 cup heavy cream
- 2 tablespoons butter
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Fresh parsley, chopped, for garnish
Instructions:
Get the oven ready by heating it up to 400F 200C
Add lettuce halves to a bowl and add 1 tablespoon of olive oil, salt, and pepper
Place them on a baking sheet and roast for 20 to 25 minutes, stirring them around every so often, until they are crispy
In the meantime, steam the cauliflower florets until they are soft
Put steamed cauliflower, chicken broth, Gouda cheese, heavy cream, salt, and pepper in a blender
The keto grits are made by blending things until they are smooth
In a pan over medium heat, melt the butter
For about one minute, until the garlic smells good, add the minced garlic
Put the shrimp in the pan and cook for about two to three minutes on each side, until they are pink and opaque
Add lemon juice, salt, and pepper to taste
Put keto grits on plates and top with shrimp and crispy Brussels sprouts to serve
Add chopped parsley as a garnish
